This broccoli apple salad gets a Mediterranean makeover with crunchy vegetables, juicy apples, toasted seeds, fresh herbs, and a lemony olive oil dressing. It’s bright, zesty, naturally gluten-free, and great for meal prep or potlucks.

Ingredients 

For the salad:

3 cups broccoli florets (chopped small)

1 crisp apple (e.g., Gala, Fuji), diced

1/4 cup red onion, finely diced

1/4 cup Kalamata olives, chopped

1/4 cup sun-dried tomatoes (oil-packed or softened), chopped

2 tbsp toasted pumpkin seeds or sunflower seeds

2 tbsp crumbled feta cheese (optional or dairy-free)

2 tbsp chopped fresh parsley or mint

For the dressing:

3 tbsp extra virgin olive oil

Juice of 1 lemon

1 tsp Dijon mustard (optional)

1 tsp maple syrup or honey

Salt and black pepper to taste

Instructions:

1. (Optional) Blanch Broccoli:

For a slightly softer texture, blanch broccoli florets in boiling water for 30 seconds, then transfer to an ice bath. Drain well.

2. Combine Ingredients:

In a large bowl, toss broccoli, apple, onion, olives, sun-dried tomatoes, seeds, feta, and herbs.

3. Make the Dressing:

Whisk together olive oil, lemon juice, mustard, syrup/honey, salt, and pepper.

4. Toss & Serve:

Pour dressing over the salad. Toss to coat evenly.

Let sit 10 minutes before serving for best flavor.

 

Notes & Tips:

Make it a meal:  Add chickpeas, quinoa, or grilled chicken for extra protein.

Low-FODMAP version: Use green onions instead of red onions, and a small amount of apple.

For crunch: Add chopped cucumber or thin-sliced radishes.
