Ingredients

For the Salad:

1½ cups cooked white beans (cannellini or Great Northern), rinsed and drained

1½ cups heirloom cherry tomatoes, halved (or chopped large heirloom tomatoes)

¼ small red onion, thinly sliced

¼ cup chopped fresh parsley

2 tbsp fresh mint or basil, chopped

2 tbsp crumbled feta (optional)

Salt & pepper, to taste

For the Dressing:

2 tbsp extra virgin olive oil

1 tbsp fresh lemon juice

1 tsp red wine vinegar

1 small garlic clove, minced

½ tsp Dijon mustard

Salt & pepper, to taste

For the Crispy Zaatar Pita:

2 small pita breads, cut into triangles

1½ tbsp olive oil

1½ tbsp za’atar spice blend

Sea salt, to taste

Instructions

1. Make the Crispy Za’atar Pita

Preheat oven to 375°F (190°C). Toss pita triangles with olive oil and za’atar, plus a pinch of salt. Spread on a baking sheet in a single layer and bake for 8–10 minutes, flipping once, until golden and crispy. Let cool slightly.

2. Make the Dressing

In a small bowl or jar, whisk together olive oil, lemon juice, red wine vinegar, garlic, Dijon, salt, and pepper. Taste and adjust acidity/salt as needed.

3. Assemble the Salad

In a mixing bowl, gently toss together the beans, tomatoes, red onion, parsley, and mint. Drizzle with dressing and toss again. Top with feta if using.

4. Serve

Plate the salad and serve with crispy za’atar pita chips on the side — or crumble some pita directly into the salad for extra crunch.
