Ingredients

Chives (blanched quickly in hot water to make them flexible)

Instructions

1. Make the Crepes:

In a blender or bowl, mix flour, eggs, milk, melted butter, and salt until smooth.

Let the batter rest for 10–15 minutes.

Heat a non-stick pan over medium heat. Lightly grease it.

Pour in about 1/4 cup batter and swirl to coat the bottom.

Cook for 1–2 minutes per side until lightly golden. Stack crepes and set aside.

2. Prepare the Filling:

In a bowl, combine ricotta, feta, sun-dried tomatoes, olives, lemon zest, herbs, and black pepper. Mix until creamy.

3. Assemble the Bundles:

Place a crepe on a flat surface.

Spoon 2 tbsp of filling into the center.

Gently gather the edges to form a pouch and tie with a chive or green onion strip.

4. Bake or Serve Warm:

(Optional) Place bundles on a baking tray and bake at 180°C (350°F) for 10 minutes until warmed through.

Or serve directly as soft crepes at room temp or gently reheated.
