Ingredients:

2 tbsp olive oil

3 cloves garlic, minced

2 tbsp sun-dried tomatoes, finely chopped

½ tsp dried oregano or za’atar

Optional: pinch of chili flakes

For the Toast:

4–6 slices rustic bread (ciabatta, sourdough, or French bread)

1 tbsp olive oil (for brushing)

¾ cup shredded mozzarella or provolone

¼ cup crumbled feta cheese

2 tbsp kalamata olives, thinly sliced

Fresh parsley or basil, for garnish

Optional: drizzle of olive oil or balsamic glaze

Instructions:

1. Toast the Bread:

Preheat oven to 400°F (200°C).

Brush both sides of the bread lightly with olive oil.

Toast for 5–6 minutes until lightly golden. Set aside.

2. Prepare Mediterranean Garlic Mushrooms:

In a skillet, heat 2 tbsp olive oil over medium heat.

Add mushrooms and saute for 6–8 minutes until golden.

Add garlic and sun-dried tomatoes, cook for another 1–2 minutes.

Season with salt, pepper, oregano, and chili flakes if using.

3. Assemble the Toasts:

Spoon the mushroom mixture onto each toasted bread slice.

Top with shredded mozzarella, a sprinkle of crumbled feta, and a few olive slices.

4. Melt & Finish:

Place in the oven or under a broiler for 4–6 minutes, until the cheese is melted and slightly bubbly.

Remove, sprinkle with fresh parsley or basil, and drizzle lightly with olive oil or balsamic glaze.
