Ingredients

Instructions
1. Marinate the Chicken:
In a bowl, mix olive oil, lemon juice & zest, garlic, oregano, cumin, salt, and pepper. Add chicken, coat well, and marinate for at least 20 minutes (or overnight for max flavor).
2. Roast the Veggies:
Preheat oven to 220°C (425°F). Toss zucchini, bell pepper, and onion with olive oil, salt, and pepper. Roast on a tray for 20–25 minutes until tender and golden.
3. Grill the Chicken:
Grill chicken on a pan or outdoor grill over medium-high heat, 5–6 minutes per side or until cooked through. Let rest, then slice.
4. Prepare the Couscous:
Place couscous in a bowl. Pour over boiling water, olive oil, and salt. Cover and let sit for 5 minutes. Fluff with a fork.
