Ingredients (Serves 4):
1 block halloumi (about 225g), cut into 1-inch cubes
1 medium aubergine (eggplant), cut into 1-inch chunks
16 cherry tomatoes
2 tbsp olive oi
1 tsp dried oregano (or fresh thyme
1 garlic clove, minced
Salt & pepper, to taste
Lemon wedges, to serve

Skewers (wooden soaked for 30 min or metal)
Instructions:
Prep the marinade:
In a bowl, mix olive oil, garlic, oregano, salt, and pepper.
Marinate:
Add halloumi cubes, aubergine pieces, and cherry tomatoes. Toss gently to coat. Let sit for 15–20 minutes while the grill or pan heats.
Assemble skewers:
Alternate between aubergine, tomato, and halloumi on each skewer. Repeat pattern until skewers are full.
Cook:
Grill: Preheat to medium-high. Grill skewers 3–4 minutes per side, turning until charred and tender.
Oven: Roast at 220°C (430°F) for 15–18 minutes, turning once.
Pan: Cook on a grill pan over medium heat for 4–5 minutes per side.

Drizzle with any leftover marinade, garnish with herbs, and squeeze lemon juice over the top.
