Ingredients
For the salad:
4 cups arugula (or baby greens)
2 medium beets, roasted and sliced (or use vacuum-sealed cooked beets)
1 cup fresh cherries, pitted and halved (or use grapes if out of season)
1/4 cup toasted pistachios or walnuts
Optional: thin slices of red onion or radish
For the whipped feta:
1/2 cup feta cheese
1/4 cup Greek yogurt
1 tbsp olive oil
1 tsp lemon juice
Black pepper to taste
For the honey-balsamic dressing:
2 tbsp balsamic vinegar
1 tbsp honey or maple syrup
3 tbsp olive oil
1 tsp Dijon mustard
Salt & pepper to taste
Instructions
1. Roast the beets (if not using pre-cooked)
Wrap beets in foil and roast at 200°C (400°F) for 35–40 minutes until tender.
Let cool, then peel and slice into rounds or wedges.
2. Make the whipped feta
In a food processor or with a hand mixer, blend feta, yogurt, olive oil, lemon juice, and black pepper until smooth and creamy.
3. Make the dressing
Whisk together balsamic, honey, olive oil, Dijon, salt, and pepper until emulsified.
4. Assemble the salad
Spread a swirl of whipped feta on the bottom of a serving plate or bowl.
Toss arugula with a little dressing and place on top.
Arrange roasted beets, cherries, and onion/radish slices around.
Sprinkle with pistachios and drizzle more dressing on top.
