Ingredients:
1 bunch (about 300g) asparagus, trimmed
250g cherry tomatoes, halved
100g feta cheese, crumbled
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice (or to taste)
1 tsp Dijon mustard (optional)
1 small garlic clove, minced
Salt & freshly ground black pepper, to taste
2 tbsp fresh basil or parsley, chopped (optional)
Instructions:
Blanch the asparagus:
Brig pot of salted water to a boil.
Add asparagus and cook for 2–3 minutes until tender-crisp and bright green.
Drain and immediately transfer to an ice bath (or cold water) to stop cooking. Pat dry and chop into 2-inch pieces.
Prepare the dressing:
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard (if using), garlic, salt, and pepper.
Assemble the salad:
In a large bowl, combine the blanched asparagus, halved cherry tomatoes, and crumbled feta.
Drizzle with the dressing and toss gently to coat.
Garnish & serve:
Spinkle fresh herbs over the top if using.
Serve immediately or chill for up to 2 hours before serving.
