Ingredients:
For the Fish:
1.5 lbs (680g) white fish (cod, tilapia, or mahi-mahi)
1 tbsp olive oil
1 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp cayenne (optional)
Salt and black pepper to taste
Juice of 1/2 lemon
For the Pineapple Lime Rice:
1 cup long grain white or jasmine rice
1 ½ cups water or broth
1/2 cup fresh pineapple, finely chopped
Zest + juice of 1 lime
1 tbsp olive oil or butter
Pinch of salt
Bowl Toppings:
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/3 cup Kalamata olives (optional)
1/4 cup crumbled feta

Tzatziki Sauce:
3/4 cup Greek yogurt
1/3 cucumber, grated & squeezed dry
1 garlic clove, minced
1 tbsp lemon juice
1 tsp olive oil
Salt & pepper to taste

1. Cook the Pineapple Lime Rice:
Rinse rice and combine with water or broth in a saucepan. Bring to a boil, then cover and simmer for 15 minutes or until tender. Turn off heat and stir in pineapple, lime zest, lime juice, olive oil/butter, and a pinch of salt. Fluff and keep warm.
2. Prepare the Fish:
Mix olive oil, lemon juice, and all spices in a small bowl. Rub onto fish. Let sit for 10–15 minutes while rice cooks.
3. Cook the Fish:
Grill, bake (400°F / 200°C for 12–15 minutes), or pan-sear fish 3–4 minutes per side (depending on thickness), until flaky and cooked through.
4. Make Tzatziki:
Mix all tzatziki ingredients in a bowl and chill.
5. Assemble the Bowls:
Add a scoop of pineapple-lime rice to each bowl. Top with chunks of fish, tomatoes, cucumber, onion, olives, feta, and herbs. Drizzle with tzatziki and garnish with extra lime.
