Ingredients:
For the Bowl:
1 large eggplant, sliced into rounds
1 tbsp olive oil
1 tsp dried oregano
1 (15 oz) can chickpeas, drained and rinsed
1 tsp paprika
1/2 tsp cumin
Salt & pepper to taste
1 cup cooked couscous or quinoa
1 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
Fresh parsley or mint for garnish
For the Lemon Herb Yogurt Sauce:
3/4 cup Greek yogurt
1 tbsp lemon juice
1 tsp lemon zest
1 garlic clove, finely grated
1 tbsp olive oil
1 tbsp chopped fresh dill or parsley
Salt and black pepper to taste
Instructions:
1. Grill the Eggplant:
Brush eggplant slices with olive oil, sprinkle with oregano, salt, and pepper. Grill on a grill pan or outdoor grill for 3–4 minutes per side until tender and lightly charred.
2. Roast the Chickpeas:
Toss chickpeas with olive oil, paprika, cumin, salt, and pepper. Roast at 400°F (200°C) for 20–25 minutes until golden and crispy.
3. Prepare the Sauce:
Mix all yogurt sauce ingredients in a bowl until creamy and well combined. Chill while assembling the bowl.
4. Assemble the Bowl:
Divide couscous/quinoa into 4 bowls. Top with grilled eggplant, crispy chickpeas, tomatoes, red onion, and fresh herbs. Drizzle generously with lemon herb yogurt sauce.
