Ingredients:
1 lb (450g) lean ground beef
1 tsp chili powder
½ tsp ground cumin
½ tsp garlic powder
½ tsp smoked paprika
Salt & pepper, to taste
2 cups cooked white or brown rice
1 can (15 oz) black beans, rinsed and drained
1 cup corn (canned, frozen, or fresh)
1 cup cherry tomatoes, halved
1 avocado, diced
¼ cup chopped red onion
Optional: fresh cilantro, shredded cheese, lime wedges
Optional Yogurt Sauce:
¼ cup plain Greek yogurt or sour cream
1 tbsp lime juice
½ tsp garlic powder
Pinch of salt
Instructions:
Cook the Beef
In a skillet over medium heat, cook ground beef until browned. Add chili powder, cumin, garlic powder, paprika, salt, and pepper. Stir to combine.
Make the Sauce (optional)
Mix Greek yogurt, lime juice, garlic powder, and a pinch of salt in a small bowl.
Assemble the Bowls
In 4 bowls, add a layer of rice. Top with cooked beef, black beans, corn, tomatoes, avocado, and red onion. Add optional sauce, cheese, or cilantro.
Tips:
