Ingredients:

2 medium zucchinis, grated

1 cup (100g) Halloumi cheese, grated

2 eggs

¼ cup chopped fresh herbs (parsley, mint, or dill)

2 spring onions or ½ small red onion, finely chopped

½ cup all-purpose flour (or chickpea flour for GF)

1 teaspoon baking powder

Salt & black pepper, to taste

½ teaspoon chili flakes

Olive oil, for frying

Easy Lemon Yogurt Sauce:

½ cup Greek yogurt

1 tablespoon lemon juice

1 teaspoon olive oil

1 clove garlic, minced

Salt and pepper to taste
Mix all ingredients in a bowl. Chill until ready to serve.

Instructions:

Prepare zucchini: Place grated zucchini in a clean kitchen towel. Squeeze out as much moisture as possible — this helps avoid soggy fritters.

Mix ingredients: In a bowl, combine zucchini, grated Halloumi, eggs, herbs, onions, flour, baking powder, salt, pepper, and optional chili flakes. Stir until well mixed.

Form fritters: Scoop about 2 tablespoons of mixture and flatten slightly into patties.

Fry: Heat olive oil in a large skillet over medium heat. Fry fritters in batches, about 2–3 minutes per side, until golden brown and crisp.

Drain: Place on paper towels to absorb excess oil.
