Ingredients (Serves 2-3):
Tagliatelle – 200g (fresh or dry)
Mushrooms – 200g, sliced (cremini or button)
Sun-dried tomatoes – ½ cup, thinly sliced (ol-packed, drained)
Garlic – 3 cloves, minced
Heavy cream – 1 cup
Parmesan cheese – ½ cup, grated
Olive oil – 2 tbsp
1 tbsp
Salt & pepper – to taste
Chili flakes – optional, a pinch
Fresh basil or parsley – for garnish
Instructions:
Cook pasta:
Bring a pot of salted water to boil. Cook tagliatelle according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
Sauté mushrooms:
In a large skillet, heat olive oil and butter over medium heat. Add mushrooms and a pinch of salt. Cook for 6–8 minutes until browned and tender.
Add garlic & tomatoes:
Stir in the minced garlic and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
Make the sauce:
Lower the heat, pour in the cream, and stir. Simmer gently for 3–4 minutes until slightly thickened.
Add cheese:
Stir in grated Parmesan until melted. Season with salt, pepper, and chili flakes (if using). Add a splash of reserved pasta water if sauce is too thick.
Combine pasta:
Toss the drained tagliatelle into the skillet. Mix well to coat the pasta evenly in the creamy sauce.
Serve:
Plate and top with extra Parmesan and fresh herbs. Enjoy hot!
