Ingredients
4 slices hearty bread (sourdough or whole grain works great)
1 tbsp olive oil
1 garlic clove, minced
2 cups fresh spinach (or 1 cup frozen spinach, thawed & squeezed dry)
½ cup crumbled feta cheese
½ cup shredded mozzarella (or provolone for extra melt)
1 tsp dried oregano (optional)
Black pepper, to taste
2 tsp olive oil (for grilling)
Instructions
1. Cook the Spinach
Heat 1 tbsp olive oil in a skillet over medium heat.
Add garlic and sauté 30 seconds.
Stir in spinach, cook 2–3 minutes until wilted.
Season with oregano and pepper. Remove from heat.
2. Assemble Sandwiches
On two bread slices, layer spinach mixture, crumbled feta, and mozzarella.
Top with remaining bread slices.
3. Grill the Sandwiches
Heat a nonstick skillet or griddle over medium heat.
Spread a thin layer of butter (or brush olive oil) on the outsides of the bread.
Cook each sandwich 3–4 minutes per side until bread is golden and cheese is melted.
4. Serve
Slice in half and enjoy warm, optionally with a side of tomato soup or a Greek salad.
