Ingredients:

1.5 lbs (about 3 medium) boneless, skinless chicken breasts or thighs, cut into chunks or thinly sliced

Salt & pepper, to taste

1 tsp garlic powder

1 tsp onion powder

1 tbsp olive oil or butter

4 cloves garlic, minced

1 cup chicken broth (or dry white wine)

1 cup heavy cream (or half-and-half for lighter version)

1/2 cup grated Parmesan cheese

4–5 cups fresh baby spinach

Optional: red pepper flakes or a pinch of nutmeg for extra flavor

Optional: 1 tbsp cream cheese for added creaminess

Instructions:

Season & Sear Chicken:

Season the chicken with salt, pepper, garlic powder, and onion powder.

In a large skillet over medium-high heat, heat olive oil or butter.

Add chicken and cook until golden brown and cooked through (about 5–7 minutes). Remove and set aside.

Make the Creamy Sauce:

In the same skillet, reduce heat to medium. Add a bit more oil if needed.

Sauté garlic for 30 seconds until fragrant.

Pour in chicken broth (or wine) and scrape up browned bits. Let it simmer for 2–3 minutes to reduce slightly.

Stir in heavy cream and Parmesan. Simmer for 3–4 minutes until thickened. (Add cream cheese here if using.)

Season with more salt, pepper, and a pinch of nutmeg or red pepper flakes if desired.

Add Spinach:

Stir in fresh spinach. Cook until wilted (1–2 minutes).

Combine:

Return chicken to the skillet and stir to coat in sauce.

Let everything simmer for 2–3 more minutes so flavors meld.

Serving Ideas:

Serve over pasta, rice, mashed potatoes, or cauliflower rice.
