Ingredients (Serves 2):

4 slices of bread (sourdough or thick white bread works best)

4 strips of bacon (cooked until crispy

1 jalapeño, sliced thin (remove seeds for less heat)

1/3 cup sharp cheddar cheese, shredded

1/3 cup Monterey Jack cheese, shredded

1/3 cup cream cheese (softened or whipped)

Optional Add-ins:

Dash of garlic powder or smoked paprika

Thin tomato slices or pickled jalapeños for extra zing

Instructions:

Prep the ingredients:

Cook the bacon until crispy and drain on paper towels.

Lightly sauté the jalapeño slices if you prefer them softer (optional).

Assemble the sandwiches:one side of each slice of bread.

On the unbuttered side, spread a layer of cream cheese.

Sprinkle cheddar and Monterey Jack cheese over the cream cheese.

Add bacon strips and jalapeño slices evenly.

Top with the second slice of bread (buttered side out).

Grill it:

Heat a skillet or griddle over medium heat.

Place the sandwiches in the pan and cook until golden brown and the cheese is melted (about 3–4 minutes per side).

Press down lightly with a spatula for even toasting.

Serve:

Let it cool for a minute or two before slicing.

Serve with pickles, chips, or tomato soup.
