Halloumi Stroganoff Recipe
Ingredients:
250g halloumi, cut into bite-sized cubes
1 tbsp olive oil or
1 onion, finely chopped
2-3 garlic cloves, minced
250g mushrooms, sliced (button, chestnut, or mixed)
1 tsp smoked paprika
1 tbsp tomato paste
150ml vegetable stock
150ml sour cream or crème fraîche (or Greek yogurt for lighter version)
Salt and pepper to taste
Fresh parsley, chopped (for garnish
Optional: a splash of white wine or a teaspoon of Dijon mustard for depth
Instructions:
Fry the halloumi:
In a large pan, heat some oil over medium-high heat.
Add halloumi cubes and fry until golden on all sides. Remove and set aside.
Cook the base:
In the same pan, reduce heat to medium.
Add a bit more oil or butter and sauté onions until soft.
Add garlic and cook for another minute.
Add mushrooms & spices:
Add mushrooms and cook until they release their water and start to brown.
Stir in paprika and tomato paste. Cook for another 1-2 minutes.
Deglaze and simmer:
Pour in the vegetable stock (and wine or mustard if using).
Let it simmer for about 5 minutes to reduce slightly.
Creamy finish
Lower the heat and stir in the sour cream or crème fraîche.
Season with salt and pepper to taste.
Add the fried halloumi back in and let everything heat through.
Serve:
Garnish with fresh parsley.
Serve with rice, mashed potatoes, pasta, or crusty bread.
