Juice-Grilled Salmon with Sweet Mango Salsa
Ingredients – Salmon Marinade:
4 salmon fillets (skin-on or off)
1/2 cup orange juice (or pineapple juice for extra tropical flavor)
2 tbsp lime juice
2 tbsp olive oil
2 cloves garlic, minced
1 tsp honey or maple syrup (optional for extra sweetness)
Salt & pepper, to taste
Ingredients – Sweet Mango Salsa:
1 ripe mango, diced
1/2 small red onion, finely chopped
1/2 red bell pepper, diced
1 small jalapeño, minced (optional, for heat)
Juice of 1 lime
2 tbsp chopped fresh cilantro
Salt, to taste
nstructions:
1. Marinate the Salmon:
In a bowl, whisk together orange (or pineapple) juice, lime juice, olive oil, garlic, and honey.
Season the salmon with salt and pepper, then pour marinade over it.
Cover and refrigerate for 20–30 minutes (don’t over-marinate or the acid will start to “cook” the fish).
2. Make the Mango Salsa:
Combine diced mango, red onion, bell pepper, jalapeño, lime juice, and cilantro in a bowl.
Mix well and add salt to taste.
Let it sit for 10–15 minutes to let the flavors meld.
3. Grill the Salmon:
Preheat grill or grill pan to medium-high heat.
Oil the grates lightly, then place salmon skin-side down.
Grill for about 4–5 minutes per side, depending on thickness, until salmon is cooked through and has nice grill marks.
4. Serve:
Plate the grilled salmon and top generously with sweet mango salsa.
Optional sides: coconut rice, grilled asparagus, or a light mixed greens salad.
