Ingredients:
1 cup cooked quinoa or brown rice
1/2 lb steak (flank or sirloin), grilled or pan-seared
2 eggs
1 cup baby spinach or kale
1/2 avocado, sliced
1/4 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
Olive oil, salt, pepper, garlic powde
Hot sauce or salsa (optional)
Instructions:
Cook your grain (quinoa, rice, etc.) and set aside.
Season and cook the steak to your liking (medium-rare is great). Let it rest, then slice thinly.
Sauté spinach or kale in a little olive oil with garlic until wilted. Season lightly.
Fry or scramble eggs in a separate pan to your preference.
