Baked Caprese with Mushrooms & Spinach
Juicy tomatoes, creamy mozzarella, fresh basil, earthy mushrooms, and tender spinach come together in a bubbling baked dish. Perfect as a vegetarian main or side, it pairs beautifully with crusty bread or pasta.

Ingredients
2 cups (200 g) mushrooms, sliced (button, cremini, or portobello)
2 cups (60 g) fresh spinach leaves
2–3 medium ripe tomatoes, sliced
250 g (9 oz) fresh mozzarella, sliced
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
Salt & black pepper, to taste
Fresh basil leaves, for garnish
Optional: balsamic glaze for drizzling
Instructions
1. Preheat Oven
Preheat to 200°C / 400°F. Lightly oil a medium baking dish.
2. Sauté Mushrooms & Spinach
1. Heat olive oil in a skillet over medium heat.
2. Add garlic and sauté for 30 seconds.
3. Add mushrooms, season with salt, pepper, and oregano. Cook for 5–6 minutes until tender.
4. Stir in spinach and cook just until wilted (1–2 minutes). Remove from heat.
3. Assemble the Bake
1. Spread the mushroom-spinach mixture evenly in the baking dish.
2. Layer tomato slices over the vegetables.
3. Arrange mozzarella slices on top.
4. Season lightly with salt and pepper.
4. Bake
Bake uncovered for 12–15 minutes until cheese is melted and bubbling.
5. Finish & Serve
Garnish with fresh basil leaves and drizzle with balsamic glaze if desired.
Serve immediately with bread, pasta, or as a side dish.
Tips
Use cherry tomatoes for a sweeter flavor and rustic look.
Add roasted red peppers for extra Mediterranean sweetness.
For a heartier version, add cooked chicken or white beans before baking.
