Burrata and Roasted Zucchini Steak

Burrata and Roasted Zucchini Steak

This dish combines the creamy richness of burrata with smoky, caramelized roasted zucchini “steaks.” Thick zucchini slices are roasted until golden and tender, then topped with luscious burrata, a drizzle of herby olive oil, and a sprinkle of toasted pine nuts. It’s elegant, fresh, and deeply satisfying — a perfect balance of lightness and indulgence.

Ingredients

2 large zucchini (cut lengthwise into thick ½–¾ inch steaks)

2 tbsp extra virgin olive oil

1 tsp sea salt (to taste)

½ tsp freshly cracked black pepper

½ tsp garlic powder

1 ball of fresh burrata cheese (about 4 oz)

2 tbsp toasted pine nuts

2 tbsp fresh basil leaves

1 tsp lemon zest

1 tsp balsamic glaze or aged balsamic vinegar

Instructions

Prep zucchini steaks

Preheat oven to 425°F (220°C).

Slice zucchini lengthwise into thick steaks. Place on a parchment-lined baking sheet.

Season & roast

Drizzle with olive oil, sprinkle with salt, pepper, and garlic powder.

Roast for 18–20 minutes, flipping halfway, until golden brown and slightly caramelized.

Toast nuts

While zucchini roasts, lightly toast pine nuts in a dry skillet over medium heat until golden and fragrant (about 2–3 minutes).

Assemble

Arrange roasted zucchini steaks on a serving plate.

Place burrata in the center (or tear into smaller pieces and scatter).

Drizzle with olive oil and balsamic glaze.

Garnish with lemon zest, basil leaves, and toasted pine nuts.

Notes & Tips

Zucchini slicing: Keep slices thick so they hold their shape during roasting.

Grill option: Instead of roasting, grill zucchini steaks for an extra smoky flavor.

Make it a meal: Serve over a bed of arugula or with toasted sourdough.

Nut-free version: Use pumpkin seeds or sunflower seeds instead of pine nuts.

Extra flavor: Add a sprinkle of za’atar, chili flakes, or sumac for Mediterranean flair.
