Total time: 40 minutes

Serves: 4

Ingredients

2 large red bell peppers

2 balls fresh burrata cheese

2 tbsp extra virgin olive oil

1 tbsp balsamic glaze

Fresh basil leaves (about ½ cup)

2 tbsp toasted pine nuts or almonds

Salt & freshly ground black pepper, to taste

Crusty bread or pita, for serving

Instructions

Roast the Peppers

Preheat oven to 450°F (230°C). Place whole peppers on a baking sheet. Roast for 25–30 minutes, turning halfway, until skins are charred.

Transfer to a bowl, cover, and let steam for 10 minutes. Peel skins, remove seeds, and slice into wide strips.

Prepare Burrata

Drain burrata and pat dry. Tear gently into halves or quarters for stacking.

Assemble the Stacks

Place a roasted pepper slice as the base.

Add a piece of burrata, followed by a fresh basil leaf.

Repeat layering with more roasted peppers and burrata.

Finish & Garnish

Drizzle with olive oil and balsamic glaze.

Sprinkle with toasted nuts, flaky sea salt, and black pepper.

Serve with warm bread for dipping.

Notes & Tips

For smoky depth, char peppers directly over a gas flame instead of roasting.

Add roasted eggplant or zucchini slices for more texture.

For a more elegant look, stack inside a round mold, then lift it off before serving.

Best enjoyed fresh while burrata is creamy and soft.
