Lemon Herb Ricotta Spread
Ingredients:
1 cup fresh ricotta cheese (or whole-milk ricotta)
Zest of 1 lemon
1 tbsp fresh lemon juice
1–2 tbsp olive oil (plus extra for drizzling)
1 garlic clove, finely grated or mashed (optional)
1 tbsp fresh chopped parsle
1 tbsp fresh chopped basil or mint (or a mix)
Salt and freshly ground black pepper, to taste
Optional: pinch of chili flakes for a bit of heat
Directions:
In a bowl, combine ricotta, lemon zest, lemon juice, olive oil, garlic (if using), and herbs.
Mix until smooth and creamy. For an extra-smooth texture, you can blend it briefly with a hand blender.
Season with salt and pepper to taste.
Drizzle with a bit of olive oil before serving. Garnish with extra herbs, lemon zest, or chili flakes if desired.
