Instructions
Marinate the Chicken
In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Add chicken, coat well, cover, and refrigerate for at least 30 minutes (up to 4 hours).
Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Cook chicken 5–6 minutes per side, until golden brown and cooked through (internal temp 165°F / 74°C).
Let rest 5 minutes, then slice into strips.
Make the Feta Sauce
Blend or whisk together feta, Greek yogurt, olive oil, lemon juice, garlic, dill/parsley, and black pepper until smooth and creamy. (Add a splash of water or more yogurt if too thick.)
Assemble the Wraps
Warm pita breads slightly (in a dry skillet or microwave).
Spread each with a generous spoonful of feta sauce.
Layer with chicken, cucumber, onion, tomato, and greens.
Sprinkle extra feta if desired, then fold or roll into a wrap.
Notes & Tips
For extra flavor, roast the chicken in the oven at 400°F (200°C) for 20–22 minutes instead of grilling.
Add kalamata olives or roasted peppers for a more authentic Greek touch.
If meal prepping, keep sauce separate and assemble just before eating.
