4 boneless, skinless chicken breasts

4 oz (115 g) cream cheese, softened

½ cup shredded mozzarella or Parmesan cheese

2 tbsp fresh parsley, chopped

2 tbsp fresh dill or basil, chopped

1 clove garlic, minced

1 tsp lemon zest

Salt & black pepper, to taste

For Coating 

½ cup breadcrumbs

2 tbsp grated Parmesan

2 tbsp olive oil

Instructions

Prep the Chicken

Preheat oven to 400°F (200°C).

Place chicken breasts between two sheets of parchment or plastic wrap. Pound gently with a mallet or rolling pin until about ¼ inch thick.

Make the Filling

In a bowl, mix cream cheese, mozzarella/Parmesan, parsley, dill/basil, garlic, lemon zest, salt, and pepper until smooth.

Fill & Roll the Chicken

Spread a spoonful of the cream cheese mixture over each chicken breast.

Roll tightly, tucking in the sides. Secure with toothpicks if needed.

Coat (Optional for Crispiness)

Mix breadcrumbs, Parmesan, and olive oil/butter.

Roll chicken lightly in breadcrumb mixture for a crunchy top.

Bake

Place chicken rolls seam-side down on a greased baking dish.

Bake 22–25 minutes, until chicken is cooked through (internal temp 165°F / 74°C).

Serve

Let rest 5 minutes before slicing.
