Ingredients

8 large eggs

1 small onion, finely diced

1 bell pepper, chopped

1 zucchini, diced (or thinly sliced)

1 cup spinach, chopped

½ cup cherry tomatoes, halved

2 tbsp olive oil

1 clove garlic, minced

1 tsp dried oregano (or Italian seasoning)

2 tbsp fresh parsley or basil, chopped

Salt & black pepper, to taste

Instructions

Preheat & Prep

Preheat oven to 375°F (190°C).

Grease a 10-inch oven-safe skillet or baking dish with olive oil.

Cook the Vegetables

Heat olive oil in the skillet over medium heat.

Sauté onion, garlic, bell pepper, and zucchini for 4–5 minutes until softened.

Add spinach and cook 1 minute until wilted.

Season with oregano, salt, and pepper.

Whisk Eggs & Cheese

In a large bowl, whisk eggs and milk until well combined.

Stir in half the cheese and fresh parsley/basil.

Combine & Bake

Spread the cooked vegetables evenly in the skillet.

Pour the egg mixture over them.

Scatter cherry tomatoes and remaining cheese on top.

Bake for 20–25 minutes, until eggs are set and top is golden.

Serve

Cool slightly before slicing.

Garnish with extra herbs and serve warm or at room temperature.
