Cook time: 20–25 minutes

Total time: 45 minutes

Ingredients

1 sheet puff pastry (thawed if frozen)

1 1/2 cups fresh spinach, chopped (or thawed frozen spinach, well-drained)

1/2 cup crumbled feta cheese

1/4 cup ricotta or cream cheese (optional, for creaminess)

1 clove garlic, minced

1 small shallot or onion, finely chopped

1 tbsp olive oil

1 egg (for egg wash)

1/2 tsp dried oregano (or dill for variation)

Salt & black pepper, to taste

Sesame seeds or nigella seeds

Instructions

Prepare Filling → Heat olive oil in a pan, saute garlic and shallot until fragrant. Add spinach, cook 2–3 minutes until wilted. Remove from heat, let cool slightly.

Mix Filling → Stir spinach with feta, ricotta (if using), oregano, salt, and pepper.

Prepare Pastry → Roll out puff pastry sheet lightly on a floured surface into a rectangle.

Fill & Roll → Spread filling evenly across pastry. Roll pastry tightly from the long side into a log.

Slice & Shape → Cut into 1-inch slices. Lay spirals flat on a parchment-lined baking sheet.

Egg Wash & Bake → Brush tops with beaten egg, sprinkle sesame/nigella seeds if desired. Bake at 400°F (200°C) for 20–25 minutes until golden and puffed.

Serve → Enjoy warm as an appetizer or snack, or pack for picnics.

Notes & Tips

Make Ahead → Assemble spirals, freeze unbaked on a tray, then store in a freezer bag. Bake straight from frozen (add ~5 minutes).

Extra Flavor → Add chopped sun-dried tomatoes or olives to the filling.

Cheese Swap → Try goat cheese instead of feta for a tangier taste.

Crispier Base → Bake spirals on a preheated baking stone or pizza pan.
