Avocado Toast with Sunny Side Egg and Fresh Fruit
Ingredients:
For the avocado toast:
1 slice of sourdough or whole-grain bread, toasted
½ ripe avocado
Salt and pepper to taste
Red pepper flakes or chili oil (optional)
Squeeze of lemon juice
For the egg:
1 egg
1 tsp olive oil or butte
Salt and pepper
Fresh fruit (your choice):
Sliced strawberries
Blueberries
Kiwi
Orange segment
Or a seasonal fruit mix
Instructions:
Toast the Bread:
Toast the bread until golden and crisp.
Prepare the Avocado:
In a small bowl, mash the avocado with a fork. Add a pinch of salt, pepper, and a squeeze of lemon juice. Spread over the toast.
Cook the Egg (Sunny Side):
Heat a non-stick pan over medium-low heat.

Crack in the egg gently and let it cook until the whites are set and the yolk is still runny (about 2–3 minutes).
Season with salt and pepper.
Assemble
Place the sunny side egg on top of the avocado toast.
Sprinkle with red pepper flakes or drizzle with chili oil if desired.
Plate with Fresh Fruit:
Arrange fresh fruit on the side of the plate for a colorful, nutrient-packed addition.
