Ingredients

For the Lamb

1 lb (450g) ground lamb (or leftover shredded lamb roast)

2 tbsp olive oil

1 small onion, finely diced

3 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

½ tsp ground cinnamon

Salt & black pepper to taste

Juice of ½ lemon

For the Toppings

8 small flour tortillas or mini pitas (warm)

1 cup tzatziki sauce (Greek yogurt, cucumber, garlic, dill, lemon)

1 cup cherry tomatoes, diced

1 medium cucumber, diced

¼ red onion, thinly sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley or mint, chopped

Kalamata olives, sliced

Instructions

1. Cook the Lamb

Heat olive oil in a skillet over medium heat.

Add onion and garlic, saute 2–3 minutes until fragrant.

Add ground lamb, breaking it up with a spoon. Cook until browned (8–10 minutes).

Stir in cumin, paprika, oregano, cinnamon, salt, pepper, and lemon juice. Simmer 2–3 minutes to blend flavors.

2. Warm the Tortillas/Pitas

Heat tortillas in a dry skillet or wrap in foil and warm in oven at 350°F (175°C) for 5 minutes.

3. Assemble the Tacos

Spread tzatziki on each tortilla.

Add a spoonful of spiced lamb.

Top with tomatoes, cucumber, onion, feta, and olives.

Sprinkle with fresh parsley or mint.

Serve with lemon wedges for extra brightness.
