Greek Roasted Garlic Spinach White Pizza

Ingredients:

For the roasted garlic:

1 head garlic

1 tsp olive oil

For the pizza:

1 prepared pizza dough (store-bought or homemade)

1 tbsp olive oil (for brushing crust)

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 ½ cups fresh spinach (chopped or wilted)

1/4 cup red onion (thinly sliced)

1/4 cup Kalamata olives (sliced, optional)

1/2 tsp dried oregano

Salt and pepper to taste

Instructions:

Roast the Garlic:

Preheat oven to 400°F (200°C).

Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for ~35–40 minutes until soft and golden.

Let cool, then squeeze out the roasted garlic cloves and mash into a paste.

Preheat oven to 475°F (245°C) with a pizza stone or baking sheet inside.

Prepare the Dough:

Roll or stretch out the pizza dough on a floured surface.

Brush with olive oil.

Build the Base:

Mix roasted garlic paste with ricotta and a little salt and pepper.

Spread garlic-ricotta mixture over the dough.

Add Toppings:

Sprinkle mozzarella and Parmesan over the ricotta layer.

Add spinach, red onions, and olives.

Crumble feta over the top.

Sprinkle oregano and a touch more black pepper.

Bake:

Carefully transfer pizza to the hot stone or sheet.

Bake for 10–13 minutes until crust is golden and cheese is bubbly.

Serve:

Let cool slightly, then slice and enjoy!
