Avocado Chicken Salad Lettuce Wraps
Ingredients (Serves 2–3)
2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
1 ripe avocado, peeled and mashed
2 tablespoons plain Greek yogurt or mayo (optional, for creaminess)
1 tablespoon lime or lemon juice
1 stalk celery, diced
1 green onion, chopped
2 tablespoons chopped cilantro or parsley (optional)
Salt & pepper, to taste
lettuce leaves, for wrapping (or romaine, iceberg, etc.)
Optional Add-ins
Diced tomatoes or cherry tomatoes
Crumbled bacon
Chopped cucumber
A dash of hot sauce or paprika
Diced red onion
Instructions
Mash the avocado in a bowl with lime juice, salt, and pepper.
Mix in chicken, celery, green onion, and any optional add-ins.
Stir in Greek yogurt or mayo for extra creaminess (optional).
Taste and adjust seasoning.
Scoop the salad into lettuce leaves and serve immediately.
Serving Suggestions
Serve cold or room temperature.
Add a side of fruit, veggie chips, or a light soup.
