For the Sauce

1/2 cup Greek yogurt

2 tbsp mayonnaise

1 tbsp lime juice

1 clove garlic, minced

1/2 tsp chili powder

Salt, to taste

For the Bowl

3 cups cooked rice (white, brown, or cilantro-lime rice)

1/2 cup cotija cheese

1/4 cup fresh cilantro, chopped

Optional toppings: avocado slices, jalapenos, hot sauce

Instructions

Cook the chicken:

Mix olive oil, chili powder, paprika, cumin, salt, pepper, and lime juice.
