2 large eggs, beaten

1 cup panko breadcrumbs

3 tbsp olive oil

1 cup fresh mozzarella, sliced

2 medium tomatoes, sliced

Fresh basil leaves

Instructions

Prep Chicken:

Pound chicken breasts to even thickness. Season with salt and pepper.

Breading Station:

Place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, oregano in a third.
