Notes & Tips
For extra crispiness, broil for 2–3 minutes at the end.
If you prefer creamier potatoes, cover the baking dish with foil for the first half of baking.
Add kalamata olives for a more authentic Greek touch.
Works great as a side with Greek chicken, lamb, or grilled veggies.
Frequently Asked Questions
Q: Can I make this ahead of time?
Yes — roast the potatoes, store in the fridge, then reheat at 200°C (400°F) for 10–15 minutes.
Q: Can I skip the broth?
The broth helps soften and flavor the potatoes — but you can replace it with water and extra olive oil if needed.
Q: Which feta works best?
Use a block of authentic Greek feta in brine (creamier and less crumbly than pre-packaged).
