Ingredients
For the Chicken
500 g (1 lb) boneless, skinless chicken thighs (or breasts)
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced

½ tsp paprika

For the Roasted Veggies
1 zucchini, sliced into half-moons
1 red bell pepper, sliced into strips
1 red onion, sliced into wedges
1 small eggplant, diced
2 tbsp olive oil
½ tsp dried oregano
Salt & pepper, to taste
For the Wraps
4 pita breads
1 cup tzatziki sauce
½ cup crumbled feta cheese
Fresh parsley or dill, chopped, for garnish
Instructions
Step 1: Marinate the Chicken
Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl.
Add chicken, coat well, and marinate at least 30 minutes (up to overnight).
Step 2: Roast the Veggies
Preheat oven to 200°C (400°F).
Toss zucchini, bell pepper, onion, and eggplant with olive oil, oregano, salt, and pepper.
Spread on a baking sheet in a single layer.
Roast for 20–25 minutes, stirring halfway, until tender and caramelized.
Step 3: Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Cook chicken 4–5 minutes per side until golden brown and cooked through.
Rest 5 minutes, then slice into strips.
Step 4: Assemble the Wraps
Warm pita bread.
Spread a spoonful of tzatziki on each pita.
Layer with roasted veggies and sliced chicken.
Sprinkle feta and fresh herbs on top.
