This salad has become a Mediterranean summer favorite — people love it because it’s fresh, colorful, and restaurant-quality yet super easy. Sweet grilled peaches, creamy burrata, peppery arugula, and a tangy-sweet dressing create the ultimate refreshing combo.

Ingredients

3 ripe peaches, halved & pitted

2 tbsp olive oil (for grilling)

4 cups arugula (or baby spinach mix)

2 burrata balls (or fresh mozzarella if not available)

¼ cup toasted pistachios (or almonds/walnuts)

2 tbsp fresh basil leaves, torn

1 tbsp fresh mint leaves, torn (optional, for extra freshness)

Honey-Lemon Dressing:

3 tbsp extra virgin olive oil

1 tbsp fresh lemon juice

1 tsp honey

½ tsp Dijon mustard

Salt & black pepper to taste

  Instructions

1. Grill peaches

Brush peach halves lightly with olive oil.

Grill on a hot pan or outdoor grill for 2–3 minutes per side until caramelized.

2. Make dressing

Whisk olive oil, lemon juice, honey, Dijon, salt & pepper until emulsified.

3. Assemble salad

On a platter, spread arugula.

Arrange grilled peaches and torn burrata on top.

Sprinkle pistachios, basil, and mint.

4. Finish & serve

Drizzle with honey-lemon dressing.

Serve immediately while peaches are warm and burrata is creamy.

For extra Mediterranean flair, add thin slices of prosciutto.
