2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp cornstarch + 2 tbsp water

For serving:

3 cups cooked white or brown rice

1 ½ cups steamed broccoli florets

1 cup shredded carrots

2 green onions, sliced

Sesame seeds, for garnish

Instructions

Make sauce: In a small saucepan, combine soy sauce, honey, vinegar, mirin (if using), garlic, and ginger. Bring to a simmer. Stir in cornstarch slurry, whisking until sauce thickens (~2–3 min). Remove from heat.

Cook chicken: Heat olive oil in a skillet over medium-high. Add chicken, season lightly with salt & pepper, and cook until golden and fully cooked (6–7 min).

Glaze chicken: Pour teriyaki sauce over the chicken and toss until coated and glossy.

Assemble bowls: Divide rice into 4 bowls. Top with teriyaki chicken, broccoli, and carrots. Sprinkle with sesame seeds and green onions.
