2 tbsp olive oil

2 cloves garlic, minced

½ tsp paprika

4 cups mixed greens or 2 cups cooked couscous/quinoa/brown rice
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
½ cup Kalamata olives, halved
½ cup crumbled feta cheese
1 cup hummus
½ cup roasted red peppers, sliced
2 tbsp fresh parsley or mint, chopped
For the dressing:
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
½ tsp Dijon mustard
½ tsp dried oregano
Salt & pepper, to taste
Instructions
Marinate & cook chicken: Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Coat chicken and marinate 15–30 minutes. Grill or pan-sear over medium heat 6–7 minutes per side until golden and cooked through. Slice into strips.
Prepare dressing: Whisk olive oil, red wine vinegar, Dijon, oregano, salt, and pepper until smooth.
Assemble bowls: Divide greens or grains among 4 bowls. Arrange tomatoes, cucumber, onion, olives, roasted red peppers, and feta. Add sliced chicken.
