Greek-Style Roasted Carrots & Lentils with Hummus

Ingredients
Roasted Carrots
1 lb (450 g) carrots, peeled and cut into sticks or left whole if thin
2 tbsp olive oil
1 tsp ground cumin

Lentils
1 cup dry green or brown lentils, rinsed
3 cups water or vegetable broth
1 bay leaf
1 garlic clove, smashed
Salt to taste
Hummus Layer
1 cup hummus (store-bought or homemade)
1 tbsp olive oil
1 tsp lemon juice
Toppings
¼ cup crumbled feta cheese
2 tbsp kalamata olives, chopped
2 tbsp toasted pine nuts or walnuts
2 tbsp fresh parsley or dill, chopped
Lemon wedges, for serving
Instructions
1. Roast the Carrots
Preheat oven to 400°F (200°C).
Toss carrots with olive oil, cumin, paprika, oregano, salt, and pepper.
Spread on a baking sheet and roast for 25–30 minutes until tender and caramelized.
2. Cook the Lentils
In a saucepan, combine lentils, water/broth, bay leaf, and garlic.
Bring to a boil, reduce to a simmer, and cook ~20 minutes until tender but not mushy.
Drain, remove bay leaf and garlic, and season with salt.
3. Prepare Hummus Base
Spread hummus on the bottom of a serving platter or individual plates.
Drizzle with olive oil and lemon juice.
4. Assemble the Dish
Layer warm lentils over the hummus.
Top with roasted carrots.
Garnish with feta, olives, nuts, and fresh herbs.
5. Serve
Finish with a squeeze of lemon and serve warm or at room temperature.
