This salad is light, crunchy, and full of Mediterranean flavors—fresh cabbage, colorful veggies, herbs, and a lemon-olive oil dressing. It’s simple to prepare, packed with fiber, and works great as a side dish or a healthy light meal.

Ingredients
3 cups green cabbage, thinly shredded
2 cups red cabbage, thinly shredded
1 carrot, grated or julienned
1 small cucumber, diced
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
¼ cup parsley, chopped
2 tbsp fresh mint or dill, chopped (optional)
¼ cup feta cheese, crumbled (optional for topping)
2 tbsp toasted sunflower seeds or pumpkin seeds (optional for crunch)
Dressing
3 tbsp extra virgin olive oil
Juice of 1 lemon
1 tsp Dijon mustard (or ½ tsp honey for a sweeter version)
1 garlic clove, minced
½ tsp dried oregano
Salt & black pepper, to taste
Instructions
1. Prep Veggies
Shred cabbages finely and place in a large bowl.
Add carrot, cucumber, tomatoes, onion, parsley, and mint/dill.
2. Make Dressing
In a small jar, whisk olive oil, lemon juice, Dijon/honey, garlic, oregano, salt, and pepper until smooth.
3. Toss Salad
Pour dressing over veggies. Toss well until evenly coated.
4. Finish & Serve
Garnish with feta and seeds if using.
Serve immediately for crispness or let sit 15 minutes for flavors to meld.
