1 cup corn kernels

1 cup black beans

1 red bell pepper, sliced and sautéed/roasted

1 avocado, sliced

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

For the Creamy Drizzle:

¼ cup Greek yogurt

1 tbsp lime juice

1 tsp honey

½ tsp adobo sauce

Fresh cilantro leaves

Instructions

Marinate chicken:
In a bowl, whisk chipotle peppers, adobo sauce, honey, lime juice, olive oil, garlic, paprika, salt, and pepper. Add chicken, coat well, and marinate 20–30 minutes (or overnight for stronger flavor).
