These roasted sweet potatoes are tossed with olive oil, garlic, herbs, and Parmesan, then baked until golden and crispy. A perfect Mediterranean-inspired side dish for chicken, fish, or vegetarian bowls.

Ingredients

2 large sweet potatoes (about 600g), peeled and cut into 1-inch cubes

3 tbsp olive oil

3 cloves garlic, minced

½ tsp dried oregano

½ tsp paprika

½ tsp salt

¼ tsp black pepper

½ cup grated Parmesan cheese

2 tbsp fresh parsley

Instructions

1. Prep the Potatoes

Preheat oven to 200°C (400°F).

Line a baking tray with parchment paper.

2. Season

In a large bowl, toss sweet potato cubes with olive oil, garlic, oregano, paprika, salt, and pepper.

Spread evenly on the baking sheet (don’t overcrowd for crispiness).

3. Roast

Bake for 20 minutes.

Remove from oven, sprinkle with Parmesan, and toss gently.

Return to oven and roast another 10–15 minutes until golden brown and crispy edges form.

4. Finish

Garnish with fresh parsley and serve warm.
