Ingredients
Chicken & Sauce
4 boneless, skinless chicken breasts (or thighs)
2 tbsp olive oil
3 tbsp Dijon mustard
2 tbsp honey
2 tbsp whole-grain mustard (optional for texture)
2 garlic cloves (minced)
Juice of ½ lemon
1 cup canned artichoke hearts (halved or quartered, drained)
Salt & pepper, to taste
Spinach Rice
1 cup long-grain rice (basmati or jasmine works best)
2 cups chicken or vegetable broth
1 tbsp olive oil
2 garlic cloves (minced)
3 cups fresh spinach (roughly chopped)
2 tbsp fresh parsley (chopped)
Salt & pepper, to taste

Instructions
1. Cook the Spinach Rice
1. Heat 1 tbsp olive oil (or butter) in a saucepan.
2. Add garlic and sauté until fragrant (30 seconds).
3. Stir in rice, then pour in broth and bring to a boil.
4. Reduce heat, cover, and simmer 15 minutes (until rice is cooked).
5. Stir in chopped spinach and parsley until wilted. Season with salt & pepper.
2. Prepare the Chicken
1. Season chicken with salt & pepper.
2. Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes per side until golden and cooked through (internal temp 75°C / 165°F). Remove and set aside.
3. Make the Honey Mustard Sauce
1. In the same skillet, add garlic, Dijon, honey, whole-grain mustard, and lemon juice. Whisk until smooth.
2. Stir in artichoke hearts and simmer for 2–3 minutes.
3. Return chicken to the skillet, spoon sauce over, and simmer 2–3 minutes more until glazed.
4. Assemble & Serve
1. Spoon spinach rice into bowls or plates.
2. Place chicken on top and drizzle with honey mustard sauce and artichokes.
3. Garnish with lemon wedges and parsley.
