Juice of ½ lemon

Salt & black pepper, to taste

100 g (about ¾ cup) feta cheese, crumbled

Fresh parsley, chopped

Instructions

Preheat Oven

Heat oven to 200°C (400°F). Line a baking sheet with parchment paper.

Season Vegetables

In a large bowl, combine potatoes, peppers, and onion.

Add olive oil, garlic, oregano, thyme, lemon juice, salt, and pepper. Toss well to coat evenly.

Roast

Spread the mixture in a single layer on the baking sheet.
