Ingredients

12 oz (340 g) spaghetti

2 tbsp olive oil

3 garlic cloves, minced

½ cup sun-dried tomatoes, chopped

1 cup heavy cream (or half-and-half for lighter)

½ cup vegetable or chicken broth

½ cup grated Parmesan cheese

3 cups fresh spinach

½ tsp dried Italian seasoning

Salt & freshly ground black pepper, to taste

Red pepper flakes

Instructions

Cook spaghetti

Boil pasta in salted water until al dente. Reserve ½ cup pasta water, then drain.

Saute aromatics

In a large skillet, heat olive oil over medium heat.

Add garlic and chopped sun-dried tomatoes, saute 2–3 minutes until fragrant.

Make the cream sauce

Stir in broth and cream, bring to a gentle simmer.

Add Italian seasoning, salt, and pepper. Simmer 3–4 minutes to thicken slightly.

Add spinach & cheese

Stir in spinach and cook until just wilted.

Mix in Parmesan until creamy and smooth.

Toss pasta
