Ingredients
For the Steak
400 g (about 14 oz) sirloin or flank steak
2 tbsp olive oil

1 cup basmati or jasmine rice
2 cups low-sodium chicken broth
1 tbsp olive oil
1 tsp lemon zest

1 cup cherry tomatoes, halved
½ cucumber, diced

Instructions
1. Marinate the Steak
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Add steak and coat well. Marinate for at least 30 minutes (or up to 4 hours in the fridge).
2. Cook the Rice
Heat olive oil in a pot. Add rice and toast for 1 minute.
Add broth, cover, and simmer until fluffy (about 12–15 minutes).
Stir in lemon zest, lemon juice, parsley, and salt. Keep warm.
3. Make the Tzatziki
Mix yogurt, grated cucumber, olive oil, lemon juice, garlic, and herbs.
Season with salt and pepper. Chill until ready to serve.
4. Cook the Steak
Heat a grill pan or skillet over medium-high heat.
Cook steak for 3–4 minutes per side (for medium) or until desired doneness.
Rest for 5 minutes, then slice thinly against the grain.
5. Assemble the Bowls
Add a base of lemon herb rice.
Top with sliced steak, tomatoes, cucumber, red onion, and olives.
Spoon tzatziki over and sprinkle feta on top.
