Total time: 30 minutes
Ingredients
For the Chicken:
2 small chicken breasts
1 tbsp olive oil
1 garlic clove, minced
1 tsp lemon juice
½ tsp dried oregano
Salt and pepper to taste
For the Zucchini Noodles:
2 medium zucchinis, spiralized
1 tbsp olive oil
2 garlic cloves, minced
6–8 cherry tomatoes, halved
¼ cup grated Parmesan chees
¼ cup shredded mozzarella or crumbled feta
2 tbsp milk or light cream (optional, for creaminess)
Salt and black pepper, to taste
Fresh basil or parsley, chopped (for garnish)
Instructions
1. Marinate the Chicken:
Mix olive oil, garlic, lemon juice, oregano, salt, and pepper. Coat chicken breasts and let rest for 10 minutes.
2. Grill the Chicken:
Heat a grill pan or skillet over medium heat. Cook chicken 4–5 minutes per side until golden and fully cooked (internal temp 75°C/165°F). Slice and set aside.
3. Prepare the Zucchini Noodles:
In a large pan, heat olive oil.
Add garlic and sauté for 30 seconds until fragrant.
Add cherry tomatoes and cook 2–3 minutes until softened.
Add zucchini noodles and toss gently for 1–2 minutes (do not overcook—they should stay slightly firm).
4. Add Cheese and Creaminess:
Stir in Parmesan and milk (if using). Toss until slightly creamy. Add salt and pepper.
5. Combine:
Top with grilled chicken slices and sprinkle mozzarella or feta over the top. Let it melt slightly from the heat.
6. Garnish and Serve:
Sprinkle fresh basil or parsley. Serve warm with a drizzle of olive oil or lemon juice.
Tips
Don’t overcook zucchini noodles—they release water quickly.
For extra flavor, add sun-dried tomatoes or olives.
Use feta for a more Mediterranean flavor, or mozzarella for a creamy Italian twist.
You can replace chicken with shrimp or tofu for variation.
