Ingredients
For the Chicken and Marinade:
4 chicken thighs or drumsticks (bone-in, skin-on preferred for flavor)
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp lemon juice
1 tsp lemon zest
1 tsp dried oregano
½ tsp paprika (optional for color)
½ tsp thyme or rosemary

Prepare vegetables:
3 medium potatoes, peeled and cut into chunks
1 cup green peas (fresh or frozen)
1 small onion, sliced (optional)
2 tbsp olive oil

Instructions
Step 1: Preheat the Oven
Preheat your oven to 200°C (400°F).
Step 2: Marinate the Chicken
1. In a bowl, mix olive oil, garlic, lemon juice, zest, oregano, thyme, paprika, salt, and pepper.
2. Rub the mixture over the chicken pieces thoroughly.
3. Let marinate for 15–30 minutes (or up to 2 hours in the fridge for richer flavor).
Step 3: Prepare the Potatoes
1. Toss potatoes (and onions if using) with olive oil, salt, and pepper.
2. Spread evenly on a large baking dish or sheet pan.
Step 4: Bake the Chicken & Potatoes
1. Arrange marinated chicken pieces on top of the potatoes.
2. Roast in the preheated oven for 40–45 minutes, flipping the potatoes once halfway through.
3. Add the peas during the last 10 minutes of baking so they stay green and tender.
Step 5: Serve
Once the chicken is golden and fully cooked (internal temp 75°C / 165°F), remove from the oven.
Garnish with fresh parsley or dill and a squeeze of lemon juice.
Serve warm straight from the pan.
Notes & Tips
You can also add carrots or bell peppers for more color.
For crispier potatoes, don’t overcrowd the pan.
Use boneless chicken breasts or thighs if you prefer — reduce baking time to 30–35 minutes.
Frozen peas don’t need pre-cooking — just add near the end.
