Ingredients
For the Chicken

Juice of ½ lemon
For the Crispy Potatoes
2 medium potatoes, diced into 1-inch cubes
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp dried rosemary or thyme
For the Roasted Tomatoes
1 cup cherry tomatoes, halved
1 tsp olive oil
Salt and pepper, to taste
For the Lemon Garlic Yogurt Sauce
½ cup Greek yogurt
1 tbsp lemon juice
1 clove garlic, finely grated or minced
1 tbsp olive oil
Salt, to taste
Optional: 1 tbsp chopped dill or parsley

Instructions
1. Marinate and Cook the Chicken
1. In a bowl, mix olive oil, garlic powder, oregano, paprika, salt, pepper, and lemon juice.
2. Coat chicken evenly and let marinate for 10–15 minutes.
3. Grill or pan-sear on medium-high heat for 5–6 minutes per side, until golden and fully cooked.
4. Rest for 5 minutes, then slice.
2. Roast the Potatoes
1. Preheat oven to 425°F (220°C).
2. Toss potato cubes with olive oil, salt, pepper, and rosemary.
3. Spread on a baking tray and roast for 25–30 minutes, flipping halfway through, until golden and crisp.
3. Roast the Tomatoes
1. Toss tomatoes with olive oil, salt, and pepper.
2. Roast on a separate tray (or alongside the potatoes) for 10–12 minutes, until softened and slightly caramelized.
4. Make the Lemon Garlic Yogurt Sauce
1. In a small bowl, whisk together Greek yogurt, lemon juice, garlic, olive oil, and salt.
2. Stir in chopped dill or parsley (optional).
3. Chill until ready to serve.
5. Assemble the Bowl
1. Add a layer of crispy potatoes as your base.
2. Top with sliced grilled chicken and roasted tomatoes.
3. Spoon over lemon garlic yogurt sauce generously.
