For the Wraps
2–3 whole wheat or regular pita breads (or wraps/tortillas)
½ cup cherry tomatoes, halved
½ small red onion, thinly sliced
½ cup romaine lettuce or baby spinach, chopped
Optional: crumbled feta, olives, or avocado slices
Instructions
1. Marinate the Chicken
Mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper in a bowl.
Add chicken, coat evenly, and let marinate for 30 minutes (or up to 4 hours in the fridge).
2. Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Grill chicken for 5–6 minutes per side, until golden and cooked through (internal temp 75°C / 165°F).
Let rest for a few minutes, then slice thinly.
3. Make the Tzatziki Sauce
In a bowl, combine yogurt, cucumber, garlic, lemon juice, olive oil, herbs, salt, and pepper.
Mix well and chill until ready to serve.
4. Assemble the Wraps
Warm pita bread or wraps slightly for softness.
Layer with lettuce/spinach, tomatoes, onions, and sliced chicken.
Spoon generous amounts of tzatziki sauce on top.
Add feta or olives if desired.
Fold or roll tightly into a wrap.
Tips & Variations
For a lighter meal, serve the chicken and tzatziki over a salad bowl instead of a wrap.
Add grilled zucchini, bell peppers, or cucumber ribbons for extra freshness.
Meal prep–friendly: store components separately and assemble before eating.
Substitute tofu or chickpeas for a vegetarian option.
